Apple Pear Muesli Parfait

Ingredients:
Compote:
- 9 oz pear, cored and chopped
- 9 oz apple, cored and chopped
- 2 T sugar
For assembling;
- 2 cups Greek-style yogurt
Muesli:
- 1/2 cup rolled oats
- 1/4 cup ground flaxseed
- 1/4 cup toasted unsalted sunflower seeds
Instructions:
Combine pear, apple and sugar in a small pot and cook over medium low heat until apple and pear
break down and mixture is reduced and thickened, about 10 minutes. Let cool.
In a small bowl, combine oats, flaxseed and sunflower seeds. Mix well and set aside.
To assemble, spoon 1/4 cup of yogurt into 4 small glasses or bowls. Top each with 2 tablespoons cooled
compote. Add another 1/4 cup layer of yogurt to each glass, and then another 2 tablespoons of
compote to each glass. Top each with 3-4 tablespoons of muesli. Enjoy!
