Bio
Pilar Duplack is excited to join Green City Market as the Culinary Connections Manager to foster relationships between local farmers and chefs. With 15 years of experience in restaurants in Chicago, she has behind the scenes knowledge of what it takes to incorporate farm fresh local ingredients into menus and the symbiotic nature of the chef and farmer relationship.
Pilar finds strength in the interconnectedness of things, preferring to work in tandem with others to reach big goals. Or, as is said more succinctly in commercial kitchens across the country, “teamwork makes the dream work.” During her time with GCM, Pilar looks forward to creating more opportunities for cooks, chefs, farmers, and Chicagoans at large to build a community with which we might make our shared dreams of sustainability, food access, and overall happiness work.
Outside of GCM, Pilar serves on the Kitchen Committee at ACRE (Artists’ Co-operative Residency and Exhibitions). She also works on transforming a seemingly endless supply of Transformer toys for her 4-year-old and exploring light and time through her sculptural practice.
