Chatting with the Chefs: Pablo Madrigal + Paul Caravelli


Combining his academic achievements with his passion for cocktail crafting, Pablo Madrigal mastered the art of spirit infused cooking and is now the Executive chef of The Bar & Table at CH Distillery. Born and raised in Mexico City, Madrigal began his culinary pursuit in his hometown. Seeking new experiences and inspiration Madrigal traveled to New York, Playa del Carmen and West Virginia while pursing his education. His biggest breakthrough was working under CMC Richard Rosendale and alongside the ACF Olympic Culinary Team at the Greenbrier Resort. Driven to finish his education, Madrigal came to Chicago to further his studies at the Kendall College School of Culinary Arts. Honing in on his strong interest in spirits he also received his second Bachelors in Beverage Management and obtained his Sommelier certification. Chef Madrigal will wow us at his chef demonstration on July 27 at 10:30am.  

What is your favorite Green City Market product?
Depends on the season,  now the garlic scapes from Leaning Shed Farm is my favorite and I am using them in a new market salad launching this week at The Bar & Table at CH Distillery.
What is your favorite thing to do in Chicago (other than shop at Green City Market, of course)?
Venturing out to visit different neighborhoods and discovering new restaurants, experience the different cultures that make Chicago great.
What is in your fridge right now? 
The necessities: Stone fruits,  leftover marinated Heartland Meat Steaks from GCM Chefs BBQ and beer!
What is one tip you have for home cooks shopping at Green City Market?
Get to know your local farmers and ask questions! Not can you only find excellent produce but there is so much to learn about the process of growing their products. 
What is the one food you couldn't live without? 
A nice thin crust pizza, Nomad's is pretty good!
Chef Paul Caravelli brings his years of kitchen experience and passion for hospitality to Knife & Tine in Lincoln Park. He is fascinated by food and enjoys both the culinary and pastry aspects of cooking. He is a very caring and easy-going chef with an incredible sense of humor. Caravelli’s love for food began as a child where he would spend weekends cooking old world Italian with his grandpa. Paul graduated from culinary school at Kendall College in Evanston and then began his career as a line cook at Everest Room. At the urging of his fellow co-workers, he applied and was chosen for the first season on ABC’s “The Taste.” Paul was a semi-finalist on the show and got to work with his personal hero, Anthony Bourdain. After years in California, Paul became homesick and moved back to Chicago where he joined the Knife & Tine family.  Join Chef Caravelli for his chef demonstration at the market on July 30 at 10:30am. 
What is your favorite Green City Market product?
I love the produce from Seedlings Farm! They are growing these incredible Melrose Peppers for me and their apricots are the best. I made a marmalade with them for the GCM Chef BBQ and people were losing their minds. 
What is your favorite thing to do in Chicago (other than shop at Green City Market, of course)?
I love riding my bike along the lake front, taking my cat Munkers for walks (yes, I walk my cat) and going mini golfing.
What is in your fridge right now? 
Leftovers from Fat Rice, wisconsin sharp cheddar, hard boiled eggs and turkey for Munkers.
What is one tip you have for home cooks shopping at Green City Market?
Don't be so concerned with following a recipe. It should be used more as a guideline. As you get more comfortable in the kitchen the easier it will become to put your spin on things!
What is the one food you couldn't live without?
