Chatting with the Chefs: Danny Espinoza & Matt Ayala

Chicago-born chef Danny Espinoza, whose resume includes Mexique and Michelin-starred Bistrot de Saveurs in France, will translate his passion for local and seasonal ingredients at Antidote,  a new concept led by Espinoza and the owners of TWO in West Town. Coming to River North Summer, 2016. Come see what he's cooking up at the Chef Demo Wednesday, May 18. 

What is your favorite Green City Market product? 

Nichols' spring onions, they're awesome and pretty versatile. Great addition when you grill them and add to a Carne Asada!

What is your favorite thing to do in Chicago (other than shop at Green City Market, of course)? 

Favorite thing to do is grab some coffee on my day off (Shout out to Dark Matter!) and hang out with my girlfriend... Ramen or Tacos for lunch is the best! 

What is in your fridge right now? 

Milk, Orange Juice, Yogurt, Tortillas, Eggs, Valentina Hot Sauce.  

 What is one tip you have for home cooks shopping at Green City Market?

Talk to your farmers and definitely get insight of what they're selling- it's nice to hear the love they have for the produce. 

 What is the one food you couldn't live without? 

Tacos (cilantro, onion, lime)-- not the hoodrat kind though (lettuce, sour cream, cheese, iceberg).


Chef Matt Ayala attended culinary school in Atlanta, GA before moving to Chicago to begin his professional career. Since, he has worked at Gilt Bar, Schwa, and Moto. Ayala was named one of Zagat’s 30 under 30 in 2013 and continues to impress the culinary community as Executive Chef at Cochon Volant Brasserie.  Ayala will show off his seasonal cooking skills at his Chef Demo on Saturday, May 21st

What is your favorite Green City Market product? 

Anything from Nichols Farm and Orchard. 

What is your favorite thing to do in Chicago (other than shop at Green City Market, of course)? 

I take my son to the park every week- Maggie Daly Park is great. I also love grilling with friends and hanging out on my patio. The Summer season is short here so anything outside is what I enjoy during the warmer months. 

What is in your fridge right now? 

A jar of Ramp Kimchi, Ketchup, Tortillas and a couple of High Lifes! I am barely home so not much is in my kitchen/fridge if you can believe it.

What is one tip you have for home cooks shopping at Green City Market?

Go early and bring your own bags.
