Chatting with the Chefs: Timothy Cottini & Devon Quinn

Chef Timothy Cottini has over 20 years of experience and has worked with some of the best chefs in the industry. Over the years, Timothy has grown to appreciate where food comes from and the importance of using sustainably grown food served in the peak of its season. At his current restaurant, Fork, he focuses his energy to highlight local produce, sustainable fish, and naturally raised meats. We look forward to his new steakhouse focused venture, Knife, opening late Summer 2016! Check out his skills at his Chef Demo on Wednesday, May 11. 

 What is your favorite Green City Market product?

Purple Cauliflower.

What is your favorite thing to do in Chicago (other than shop at Green City Market, of course)?

Relax by the lake or go to a Cubs game.

What is in your fridge right now? 

Over 28 condiments and pickles.

What is one tip you have for home cooks shopping at Green City Market?

Always walk through and look at everything.

What is the one food you couldn't live without? 

Fried Chicken.


Chef Devon Quinn has been connected with the hospitality industry since a very young age. Devon has been a part of the Paramount team since the beginning in 2011. In his current Executive Chef roll, he oversee menu development and execution to maintain quality food presentation and service. What is your favorite Green City Market product?   

I always look for the freshest produce.  Asparagus and spring onions are looking good right now.

What is your favorite thing to do in Chicago (other than shop at Green City Market, of course)?

I spend most of my days in our kitchen.  I love it.  It is what we do.  I also like to check out other restaurants, for inspiration and nourishment. 

What is in your fridge right now?

LaCroix, beer, milk, deli meat, cheese, and Danimals.

What is one tip you have for home cooks shopping at Green City Market? 

Talk to the farmers.  Ask them what is the freshest things that they have.  Plan your meal around the ingredients.

What is the one food you couldn't live without? 

Bread.
