NewsEndless Summer Salad by Mia Arancillo

Last Saturday, Mia Arancillo joined us at GCM Lincoln Park for a Culinary Demo. Mia demoed her recipe for an Endless Summer Salad. You can find the recipe below:

endless summer salad: 

  • organic spinach - 2 cups
  • microgreens - 1/2 cup
  • baby tomatoes - 4-5 each
  • organic corn - 1/2 ear
  • organic black beans - 1/4 cup
  • melon - 3/4 cup
  • cilantro - garnish as much as you’d like
Salad dressing:
  • Extra virgin olive oil - 1/4 cup
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt (Maldon sea salt recommend)
  • Garlic - dash (1-2 pinches)
  • Ginger - dash (1-2 pinches)
  • Combine all ingredients in a bowl. Wisk well.
