Baked Turmeric Tofu Scramble

Yield: Serves 6

Ingredients:

  • Olive oil
  • 1 clove garlic, minced
  • ½ onion, diced
  • 1 red pepper, diced
  • 1 orange pepper, diced
  • 1 package Phoenix Bean Baked Turmeric Tofu
  • ¼ teaspoon turmeric (optional, for additional color)
  • Salt & pepper

Instructions:

  1. Heat olive oil in a large skillet and cook garlic, onion, and peppers until soft. 
  2. Crumble Phoenix Bean's Baked Turmeric Tofu with your hands into the skillet. Mix thoroughly and heat all the way through.
  3. If desired, add turmeric for additional color. Season with salt and pepper.
  4. Serve warm alongside your favorite breakfast sides or use to make breakfast tacos!
