Baked Turmeric Tofu Scramble

Yield: Serves 6
Ingredients:
- Olive oil
- 1 clove garlic, minced
- ½ onion, diced
- 1 red pepper, diced
- 1 orange pepper, diced
- 1 package Phoenix Bean Baked Turmeric Tofu
- ¼ teaspoon turmeric (optional, for additional color)
- Salt & pepper
Instructions:
- Heat olive oil in a large skillet and cook garlic, onion, and peppers until soft.
- Crumble Phoenix Bean's Baked Turmeric Tofu with your hands into the skillet. Mix thoroughly and heat all the way through.
- If desired, add turmeric for additional color. Season with salt and pepper.
- Serve warm alongside your favorite breakfast sides or use to make breakfast tacos!
