Rhubarb Barbecue Sauce

Rhubarb Barbecue Sauce
Yield: 4 cups


  • 1 tablespoon grapeseed oil
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 1 pound rhubarb, chopped
  • 1/4 cup ketchup
  • 2 tablespoons water
  • 2 tablespoons light brown sugar
  • 1 tablespoon honey
  • 2 tablespoon cider vinegar
  • 1 tablespoons Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 teaspoon cayenne pepper
  • 1 teaspoon chili powder
  • 1 teaspoon clove
  • Salt and pepper, to taste


  1. Preheat medium saucepan over medium heat. Saute the onion, garlic and rhubarb in the oil until tender, about 10 minutes.
  2. Add the remaining ingredients and turn heat to medium low.
  3. Cook the barbecue sauce until the flavors are rounded and desired consistency is reached, about 30 minutes. Remove from heat and allow mixture to cool completely.
  4. Transfer sauce to a blender and blend until completely smooth.
  5. Return barbecue sauce to saucepan and cook an additional 10 minutes, until the sauce turns a darker shade of pink and becomes slightly thicker.
