Simple Potato Soup
Ingredients:
- 2 tablespoons butter*
- 1 medium onion, diced
- 2 lbs any variety of potatoes, peeled or unpeeled, diced
- Salt and pepper, to taste
- Lemon or vinegar, to taste
- Water
Method:
- Melt the butter in a heavy pot. Add onions and cook over medium heat until
caramelized, about 20-30 minutes.
2. Add diced potatoes to pot and saute quickly. Add just enough water to cover the
potatoes and bring to a boil.
3. Season with salt and pepper. Cook potatoes until completely tender.
4. Puree soup with blender until smooth. Season with salt and pepper to taste. Add lemon or
vinegar to taste until flavors begin to pop.
5. Serve hot. Soup will last in the fridge for up to one week.
*to make this soup vegan, substitute any neutral oil for butter.
*to add richness to the soup, add a splash of cream or half and half.
