Winter Veggie Cream Cheese

  • 8 oz cream cheese, softened
  • 3 Tbsp finely chopped carrot 
  • 3 Tbsp finely chopped radish
  • 3 Tbsp finely chopped beet
  • 2 small cloves garlic, minced
  • 1/8 tsp salt
  • Few pinches ground black pepper
In a medium bowl, combine cream cheese, carrot, radish, beet, garlic and 1/8 tsp salt. Mix well. Add a few pinches pepper and additional salt to taste if needed. Enjoy on toasted bagels or as a sandwich spread!
Makes about 1 1/2 cups
