Salad Skewers with Carrot Miso Dressing

Makes 1 Cup (enough for 8 skewers)
Salad Skewers
  • 8 bamboo skewers
  • An assortment of colorful vegetables and salad fixings. We used... Carrots, Cucumber, and Cherry Tomatoes  (Provided by Green Acres Farm)
  • Other suggestions: romaine lettuce, chopped bell pepper (red, yellow or orange), black olives, and hard boiled eggs.
  • 4 oz. carrot, peeled and roughly chopped (Provided by Green Acres Farm)
  • 1 clove garlic, minced
  • 1 T fresh ginger, minced
  • 1 T miso (red or white)*
  • 1 T rice vinegar
  • 1 T toasted sesame oil
  • 1 T grapeseed oil
  • 1/2 cup orange juice
Place all the dressing ingredients in a small bowl.  Whisk together lightly.  Place mixture in a blender.  Process until smooth.  
Salad Skewers
Soak bamboo skewers in warm water for at least 10 minutes.  Fill each skewer with a colorful selection of vegetables.  Dip in dressing and enjoy!
