Farmhouse Executive Chef Eric Mansavage, a born-and-raised Wisconsin native and graduate of University of Wisconsin Stevens Point and the Cooking and Hospitality Institute of Chicago is taking his knowledge, technique, and passion for slow food and local-sustainable cooking back to the tavern to explore craftsmanship on a whole new seemingly familiar, yet playful take on his experiences growing up in the Midwest.
