Salad Skewers with Carrot Miso Dressing

Ingredients
Salad Skewers
- 8 bamboo skewers
- An assortment of colorful vegetables and salad fixings. We used... Carrots, Cucumber, and Cherry Tomatoes (Provided by Green Acres Farm)
- Other suggestions: romaine lettuce, chopped bell pepper (red, yellow or orange), black olives, and hard boiled eggs.
Dressing
- 4 oz. carrot, peeled and roughly chopped (Provided by Green Acres Farm)
- 1 clove garlic, minced
- 1 T fresh ginger, minced
- 1 T miso (red or white)*
- 1 T rice vinegar
- 1 T toasted sesame oil
- 1 T grapeseed oil
- 1/2 cup orange juice
Directions
Dressing
Place all the dressing ingredients in a small bowl. Whisk together lightly. Place mixture in a blender. Process until smooth.
Salad Skewers
Soak bamboo skewers in warm water for at least 10 minutes. Fill each skewer with a colorful selection of vegetables. Dip in dressing and enjoy!
