Chatting with the Chefs: Martial Noguier / Arshiya Farheen

Originally hailing from Paris, France, Martial Noguier, Executive Chef/Owner of Bistronomic, worked for a number of French chefs before coming to the United States. Noguier has more than 25 years of experience in fine dining establishments, from the venerable Pump Room to one sixtyblue and Café de Architectes. At Bistronomic, Chef Noguier serves up seasonally-inspired modern cuisine rooted in French culture that showcases ingredients from Midwest farms. A lot vegetables and fruits.

What is one tip you have for home cooks shopping at Green City Market?

A great way to enjoy those fabulous vegetables we find at the market in the winter is to pickle them, they will make perfect accompaniments to your meat and fish preparations in the winter.

What is the one food your couldn't live without? 

I could not live without the English peas and fava beans from Nichols as well as their charentais melons .... And also the melons from seedling! I can't pick just one!!!


After years of baking, Pâtissière and owner Arshiya Farheenspent over a year in Paris, studied at the French school of culinary arts-Ferrandi, worked at hotel Le Meurice, at boulangerie-pâtisserie Delmontel and brought her culinary background to life. Growing up in India, training in Paris & living in Chicago, Chef Arshiya has a refined approach to creating flavorful  pastries, cakes, desserts & other baked goods at Verzenay Pâtisserie. What is your favorite Green City Market product?
It's tough to choose just one, but I would like to say, Strawberries, Sungold tomatoes, Fresh herbs, Honey, Flowers.
What is your favorite thing to do in Chicago (other than shop at Green City Market, of course)?
I love being outdoors in summer here. So, spending time in parks or at the beach with my family or friends.
What is in your fridge right now? 
Asparagus, garlic scapes, fresh peas, shiitake, a couple of Indian curries, lots of condiments, eggs, milk, cheese & fruits. 
What is one tip you have for home cooks shopping at Green City Market?
We are privileged to have access to the freshest ingredients available. Try one, new Veggie/fruit/pastry every time you visit the market. Ask the farmer suggestions on how to cook it best. 
What is the one food your couldn't live without? 
Due to traveling a lot and living in India, France and US, I have become very adaptable. As long as I have different varieties of cuisines to choose from, I probably won't miss any one kind of food.
