Chatting with the Chefs: Brian Millman / Tom Van Lente with visiting chef Lucian Prellwitz

After gaining national recognition at TWO and the renowned Big Star, and earning a Jean Banchet Rising Chef of the Year nomination in 2013, Tom Van Lente is currently showing off his imaginative and ingredient driven style as Executive Chef at White Oak Tavern. His rise up the culinary ladder in the Windy City began at Landmark, a Boka Restaurant Group institution at which he started as prep cook before becoming sous chef.  We welcome Chef to the market for a special Chef Demonstration with visiting chef Lucian Prellwitz at Green City Market Lincoln Park on June 4 at 10:30 am!

What is your favorite Green City Market product?
Always a tough one to answer. I'd have to say heirloom tomatoes though. 
What is your favorite thing to do in Chicago (other than shop at Green City Market, of course)?
Sit on a patio with my wife, our son Benny, our pitbull Mr. Bananas and a frosty beverage. 
What is in your fridge right now?
 A lot of homemade baby food, soy sauce and a secret stash of puppy chow.
What is one tip you have for home cooks shopping at Green City Market?
Don't buy too much! The great thing about the markets these days is the availability. Buy enough for a couple days then go back to get more. Flavors and textures of all this great produce change throughout the season. Take advantage of that and educate yourself!
What is the one food your couldn't live without?
Pizza (and nachos). 


Lucian Prellwitz of the highly acclaimed Portland, OR restuarant Ned Ludd will be bringing a taste of PDX to Lincoln Park as a special guest with Tom Van Lente at the Chef Demo stage. On June 5, Prellwitz will act as White Oak's latest Chef in Residence. Chef Prellwitz is driven by the mantra “simple is best ”and focuses on local ingredients and seasonal flavors. 

What is your favorite Green City Market product?
In the current season we’re excited about green garlic and any kind of rabe (collard rabes are particularly nice)
What is your favorite thing to do in Chicago (other than shop at Green City Market, of course)?
Visit Tom (eat all around the great city of Chicago with a nice blend of high and low foods)
What is in your fridge right now?
We always have some grillable vegetables, cured meats, too much cheese and condiments.
What is one tip you have for home cooks shopping at Green City Market?
I agree with Tom on this one…don’t get too much and keep it simple.  Great ingredients with perfect seasoning (kosher salt) will do wonders.
What is the one food your couldn't live without?
Cheese

Executive Chef Brian Millman of Atwood Restuarant followed his passion for cooking to Switzerland’s prestigious Les Roches International School of Hotel Management and returned Chicago roots, where he earned a degree in Culinary Art from Kendall College. As executive chef at Chicago’s Uncommon Ground, Millman forged close relationships with local farmers and discovered a passion for working with local ingredients. Those relationships grew stronger during Brian’s time at Sable Kitchen & Bar and now at Atwood.

What is your favorite Green City Market product?
Love the Asian Mesclun mix from Green Acres
What is your favorite thing to do in Chicago (other than shop at Green City Market, of course)?
Eating at all the great restaurants and hanging with my wife & son.
What is in your fridge right now? 
Not much, just got back from New Orleans so it’s looking pretty sad. Lots of hot sauces and pickles though.
What is one tip you have for home cooks shopping at Green City Market?
Don’t be afraid to try new things. The only way to become familiar with something is to work with it. You may never know what you’re missing.
What is the one food your couldn't live without? 
Bacon
