Chatting with the Chefs: Drew Davis & Nick Lacasse

Eastman Egg Company was created two years ago with the idea to make breakfast better. They have continued their mission to make delicious food, deliver seamless service and create meaningful experiences throughout the Windy City. We welcome Chef Drew Davis to our Chef Demonstration area to show us how to change the way we think about our locally source breakfast, May 25 at 10:30am 

What is your favorite Green City Market product?
I really love everything that Bushel and Peck does--their products are always simple, delicious, and so flavorful.  I'm an acid freak, and I think that they make a damn fine pickle.  Mick Klug also never fails to bring beautiful stuff to the market
What is your favorite thing to do in Chicago (other than shop at Green City Market, of course)?
Running on the 606 is a recent obsession.  I try and go at 5AM.  Running through the neighborhoods as they just beginning to stir is a really amazing experience, and watching the sunrise always makes it feel extra special.  
What is in your fridge right now?
Gochujang, champagne, organic eggs, RAMPS, lots of hot sauces.  I always try and buy protein for dinner the day of but keep tons of condiments on hand to make something flavorful and fast.
What is one tip you have for home cooks shopping at Green City Market?
 Don't menu plan before going!  Look for the brightest colors, the fullest leaves, and the most pungent smells.  I'm by no means a spiritual guide but I think there is something really awesome about trusting your senses to pick what you eat.  You may also discover a new ingredient that you wouldn't have otherwise tried. 
What is the one food you couldn't live without?
It would be my last meal, you can prepare it thousands of different ways, and there are few things better to make for a big group of people.  

Chef Nick Lacasse began his cooking career at the age of 19 and has worked in kitchens all the way from Vermont to Portland. Currently, Nick resides in Chicago and heads up Half Acre's kitchen staff. Nick features seasonal ingredients with a New England twist as a shoutout to his home state of Vermont. Now, beer lovers can taste Chef Nick's unique menu at Half Acre's tap room on the northside of Chicago. Check out his Chef Demo on May 28 at 10:30am
What is your favorite Green City Market product?
My favorite Green City Market item is either Amazing Shrimp, or Tropea onions from Genesis growers.
What is your favorite thing to do in Chicago (other than shop at Green City Market, of course)?
Laying around in Winnemac park with my girlfriend and dog.
What is in your fridge right now?
In my fridge right now is a pile of freshly made meatballs.
What is one tip you have for home cooks shopping at Green City Market?
Talk to the vendors about what veggies and fruits will be appearing in upcoming weeks, and try something
new!
What is the one food you couldn't live without?

Onions, tomatoes and fresh herbs.
